1/4 c. Fleischmann's Margarine
1-1/2 c. raw barley
1 c. sliced mushrooms
2 med. onions, chopped
1/2 c. sliced almonds
7 pkg George Washington broth (onion flavoured)
5 c. hot water 1 c. grated tofu Cheddar Cheese
Mix together and pour in 6 cup casserole. Bake in 350 degree F. oven for 1-1/2 hours. Stir after 1 hour and sprinkle 1/2 cup more tofu cheese on top. Return to oven for remaining time (or until barley is soft). This casserole should be covered during the whole cooking time.
Serve with asparagus or broccoli, salad of your choice and dinner roles.
Leftovers: Take 2 large tablespoons of barley casserole. Role in crushed Ritz or Saltine or cracker of your choice. Fry in oil until brown on both sides.
