Tofu Vegetable Fried Rice
2 cloves garlic, minced
1-350 g. pkg. firm tofu, diced
6 Tbsp. liquid aminos
1 large onion, diced
1 cup thinly sliced celery
1 cup diced carrots
2 cups broccoli in small flowerets
4 cups cooked rice
2 cup fresh bean sprouts
2 Tbsp chicken-like seasoning
In wok or skillet, stir fry 1 minced garlic clove and diced tofu in a little olive oil for 1 minute.
Add 2 Tbsp. liquid aminos and cook until browned. (Remove and set aside.)
Stir-fry onions, celery, carrots and broccoli in a little olive oil or water for approximately 3 to 4 minutes. (Can add other veggies to taste.)
Add rice, tofu, bean sprouts, remainder of liquid aminos and chicken-like seasoning, stir-frying until heated through. Adjust seasoning to your taste.
Garnish with minced green onion, if desired.
